Idli or steamed rice cakes

Idlis are fluffy rice cakes made out of rice and black gram and is recommended during a digestive disorder by doctors.

The procedure is same as preparing the batter for dosa however the consistency is thick compared to dosa.



Ingredients

Boiled rice-1 cup
Pacha ari(raw white rice)-1 cup
Ulunu (black gram)-1/4 cup
Salt to taste

Directions



Soak raw rice for about 3-5 hours.
Soak black gram for 1-2 hours.
Grind raw rice with boiled rice in a blender adding some water and remove to a vessel.
Grind black gram  with some water and mix with above mixture.Add salt as required and stir well.

Allow it to ferment for 8-12 hours or till the batter has risen.

Grease a idli maker with few drops of oil so that idli comes out quickly when done.
Pour the batter into the greased moulds of the idli maker and place it in a vessel filled with 2 cups of water and cover it, steam for about 15-20 minutes.Make sure a vent is present for steam to escape.Remove from fire allow it to cool.
Serve with chutney or sambar.
