Onion Theeyal

Onions fried and cooked with roasted coconut along with spices and coconut oil.
Can be served with rice.It can be stored for a longer time.I used to take this to hostel and have it whenever I disliked the side dishes there.




Ingredients

Baby onions-2 hands full
Coconut grated- 1/2 of a coconut
Chilly powder- 1tsp
Corriander powder- 1tsp
Turmeric powder- 1/2 tsp
Curry leaves- 1 twig
Jaggery- 2 pinches
Tamarind- gooseberry sized ball saoked in hot water
Oil-coconut oil preferred
salt to taste

For seasoning

Mustard seeds- 1/2 tsp
Curry leaves- 1 twig
Dried red chiliies- 2-3

Directions

Take another pan add grated coconut, curry leaves and fry till light brown add some oil if required.
Now add chilly powder,corriander powder,turmeric powder and saute for a minute till the raw smell diminshes.Remove from flame cool them and grind in a blender till it forms paste and oil oozes out.

Chop  onions into thin slices and fry them in a pan till they are golden brown and crisp.
Now add tamarind water and cook till the onions bulges.Now add the ground paste and simmer for few minutes till they become thick.Add some jaggery and mix well and cook for a minute and remove from flame.

Take another pan add mustard seeds splutter them , add curry leaves and broken dried red chillies and saute well, pour this to the above mixture and mix well.
