Ambalapuzha payasam

This is one of my favourite recipies.

This payasam tastes similar to milkmaid.

Try it and taste for yourself!!!





Ingredients

Milk-4 cups
Sugar-1 cup
Pacha Ari-handful

[I have heard that some people use matta rice instead of pacha ari although I haven't tried it]


Directions


Pour 4 cups of milk into a cooker.
Add sugar .
Wash pacha ari and pat it dry.(Strain it using a strainer and and let it dry)
Then add it to the above mixture.


Let it cook on high flame without the weight on.

As soon as the steam comes out, put the weight on and simmer for 30 mins.
[Warning:Keep a close eye on the cooker since the milk might start flowing out of the cooker following the steam]

The payasam attains a peach colour and also creamy.This is the right consistency.If you feel it is watery you can allow it to simmer for another 10-15 minutes.

Tasty payasam is ready.
